I know, I know. I'm going to say what, I am sure, you are thinking. She's had a glass or two (emphasis on two) of Chardonnay. I just finished watching Band of Brothers for the second time and thought about the recipes that travel from one mom to the next. We are so quick to share something fast, easy and a crowd pleaser with our sisters in the trenches. Almost like a band of brothers....probably closer to a pack of tired moms sick of making chicken nuggets or spaghetti...but I digress.
I was sent one of these fast, easy, crowd pleasing recipes from my sister-in-law and it so happened to be a magazine recipe (whew!- something new and I could parlay it into a blog entry....Score!) They called it Crispy Chicken Salad Wrap....I think it is much closer to a Chicken Salad Chimichanga, but they didn't ask me my opinion when they wrote the recipe. It was really, really good and easy! Unfortunately, the kids saw all the green stuff that was going into the mix and were not happy. So, I did plain versions for them. Just chicken and cheese (that they loved!) and I like cilantro, but not a third of a cup of it, so I just threw some in for taste....other than that, I followed the recipe and it was a fantastic change of pace! Also, don't forget to salt and pepper the outside of the tortilla, that was a really great touch.
I hope you pack of tired moms sick of making chicken nuggets and spaghetti enjoy this as much as I did!
