What could possibly be better than sauce made from wine?

I'll tell you what...a sauce made WELL from wine. Or just an amazing wine in a glass, but a girls gotta eat!! Disclaimer: Gravy and Sauces are my weakness. When I say weakness, I mean my downfall...my complete and utter failure as a cook! I saw this recipe and it looked so incredibly fabulous. Remember, I tend to look at pictures of food that I would order in a restaurant, and this is definitely one! However, if I was served this in a restaurant I would not order it again! I am going to try more dishes that have sauces and gravys....I WILL MASTER THEM! This sauce would not thicken for me. My husband told me to have patience. Um, OK....we all know THAT'S not gonna happen!!! I even started to talk to the sauce. It's didn't hear me.
Ready to cook!!
next time I wont go thru trouble of using a racked roasting pan!!

I prepared this dish with a little bit of anxiety...at least ONE of my children was going eat this dish I slaved over....pull up a chair Morgan! I think she was so scared of me at that point she said it was my best yet! The food was actually very good....it's that damn sauce!!!!!! Oh, and I did not have a Pinot Noir that I wanted to part with for the sake of cooking...I used a Cabernet instead....maybe that's why the sauce was a failure.Let's go with that. Robbert said if anyone can tell that I used a Cabernet over a Pinot had bigger problems! In my efforts to thicken this up, I added Wondra. It was a wonder my husband ate it. I think he too was very afraid! But he did go back for seconds, that means something in my house!
Have you ever had Fingerling Potatoes? SO YUMMY!!!
I made the Rosemary Roasted Fingerling Potatoes as well, and they were great!!! I will definitely try this full dish again after I work on my sauces some more. The chicken had flavor and could potentially taste 100 times better if a cook who knew how to make sauces prepared this dish!  It was also VERY reasonable to make this dish, I had everything already in my pantry/freezer except the potatoes. The approximate total cost of this dish is $25, that would feed  5 people, not that 5 people in my house will eat what I put in front of them. All-in-all...this dish has a lot of potential to be something remarkable...that or the picture is really deceiving! Give it a whirl...let me know what you make of this dish!!!

Ready to serve!
