Some Assembly (and wine) Required...

They make it sound so easy, just simply roll up the chicken cutlets, tightly, stuffed full of a cheese mixture and place in a baking dish seam side down...good lord.  I kept rolling them up and placing them seam side down only to have all the mixture falling out all over the place and to find my "seam" was more of a gap.  So, like any slightly annoyed mother of 3 would do, I opened a bottle of wine and drank a glass.  Played some words with friends and watched a little of a recorded Real Housewives.  As I poured glass number two, I decided this chicken wasn't getting best of me.

The chicken had other plans.  After I finished glass of wine number two, I just didn't care if the cheese was hanging out and falling out.  It just made it look "Rustic", I decided.  Yes, that's the word for it, rustic.  So, Cook's Country called this "30 minute supper" Chicken Parmesan Roll-Ups....I call them Rustic Chicken Parmesan Semi Roll-Ups.  I gotta say, they were pretty tasty.  We all gave them a thumbs up!

This really was a good dish so I waited a couple or few weeks and gave it another go, in an attempt to make them appear "Non-Rustic"....

As you can plainly see....Rustic.  But, just as yummy the next time around!
